Visit Katz’s Deli in Manhattan to learn about good pastrami and corned beef.

For the South American corned beef in cans, this is great if you know what to do with it. A good start would be to refrigerate the can, then put some mayo on a sandwich, open the can, cut thin slices and put that on the sandwich with some fresh cracked pepper and salt.

In Holland it’s traditionally used in a Huzars Salad. I’m sure recipes are on the web somewhere. Especially good with apple pieces and crackers. Legend tells us about the huzars acting like commandos of their time, operating deep behind enemy lines. They couldn’t make a fire for preparing food, so they brought this “salad”. It’s good, we make it regularly.

A nice pre-cooked ham ,hung in a net bag,in the dark-should last quite long.Just slice off what you want & re-wrap.
Salted meats were the norm before refrigeration
Read up on "jarred" meats also.

After Costco, Soriana is the best supermarket for gringo food. As far as a local substitute, you can find dry shredded beef (carne seca or carne machaca) for sale at most any super.


I've tried making my own corned beef while in Mexico, but you don't get the pink color unless you have curing salt, which I never found in Mexico.

The WHO classifies corned beef and other processed meats as potential carcinogens. Eating it regularly may increase your risk of developing colorectal cancer. Thus, it's best to eat it infrequently.

That’s just crazy. This includes all sausages incl. hotdogs, bacon, spam, ham, etc. They also recommend to keep your distance from metals like lead.

And next is smoked foods, which they classify 20 times as harmful as processed meats.

Maybe one is left sucking laboratory grown meat from a tube to live a couple weeks longer.

Just think of Cat food then you will know what it tastes like.

You have just left home on an extended cruise and seem to be suffering from a bit of culture shock also known as the "Last supermarket in the World Syndrome". We encountered folks so afflicted as far west as US Samoa which is indeed the last supermarket selling familiar US staples. You've obviously never worked in a meat processing plant.. my temp job in one put me right off hotdogs, sausage and many other processed meats..
As for commercial smoked meats, that's mainly chemical spays and flavourings these days.

Well yes, everything can come at every thinkable level. I can fortunately afford to buy quality, traditionally hand made products but if it needs tobe cheap then you get the pink stuff, bleach washed and all
