The discussion of sink depth reminded me of my favorite kitchen upgrade I did to my house: Counter height matches the users. Since my wife and I are both over 6' tall, we built the counters higher than the typical 36". It makes cooking and dish washing more pleasurable and less painful on our backs. The deep sinks help prevent water splashing, but they are high enough that we don't have to bend over to reach the bottom.

Some things mentioned previously that I would like to reinforce:

Galley exhaust fan - imperative.

Dish cabinet with wire racks and open bottom, above the sink - I've done that in my house and I won't live without it again.

I find a small hatch (opens backward) above the galley is great as opposed to a fan. Just open a forward hatch a bit and the wind roars out the galley hatch.

Maybe someone with an Oyster of that era can post a photo? They are terrific, best cabinet latches I've seen in a boat.

I had a tip out cupboard for pots and pans. It was dangerous for hands, as by a lurch and gravity your hands could easily get trapped in the closing cupboard. I think the holes idea is safer than a swinging cupboard.

This seems a great improvement. I almost break my finger trying to open my trash or under the sink doors under sailing I'm not so good weather.

My garbage also tends to open then heeling to port side. I found a cheap baby lock at home depot I am installing soon, seems to do the job But had not installed them yet.

I've had them on 3 boats, They work great, either tip out or swing out with the container mounted to the door. Don't leave home without it!
