I was going to say Passport 40, but that one is taken already.....Valiant 40, Baba 40, Shannon 43 (they sometimes go for under 200).....there's too many to list

Not sure about sleeping 6, but some versions of the Passport 40, panda 40, baba 40 may comply with your needs. Not fast not slow but seaworthy.

The Tartan 40 is worth considering although is has a spade rudder, but otherwise a strong performer, Sparkman & Stephens design. Tankage is a little on the small side but two separate double cabins plus three berths in the salon, separate shower, can be had for a little over 100K.
Many new "bluewater" boats today have spade rudders............

If OP needs 6 berths in cabins without using the main cabin the only option I know about in 40' would be a cat.

Don't know of any monohulls below mid forties with three sleeping cabins. Even those are all three doubles so if you have a pair in the crowd that isn't a couple they would at least have to be very good friends.
