I am really not kidding about the dremmel with the plunge bit. It will make very short work of the foam. Heck it makes short work of monolithic carbon laminates.

I have a CL 1979. 38 foot offshore
The video you mentioned makes it relatively easy
A first timer
Follow his video to the t
Make sure you leave enough old glass to keep it's shape
Hard foam
Sand to shape
Seal with straight epoxy
Lightly sand again and the 3 to 5 layers of glass
Followed by 3 coats of epoxy berried. Paint
Finally, two coats of bottom paint
