Coconut sugar is actually one of the premier sugars around. They're using it for diabetics, since it's essentially a naturally super-sweet sugar, containing tons of sweetness for very few calories.

Collection is the same as for coconut wine. You climb the tree and chop the end off of the young, unopened coconut pods (spadix?). You have to climb the tree to scrape the end 2-3 times per day to keep the sap flowing, but they'll yield for quite awhile, and you just collect into a big piece of bamboo section or a plastic bottle.

You can either make wine with the sap, or you can reduce it a bunch and end up with coconut sugar.

I think the only thing needed to bring along is your imagination. After all it is the end of the world and you are going to have to start all over again.

A few recommendations though:

While re-creating the world, rest on the 3rd, 5th and 7th day… since we want a better balance!

Do not covet thy neighbors sheep, …since there will probably already be an overabundance of antipodean survivors because of geographical luck and again…. we want a better balance!

Let’s just outlaw Magnetic North, since it confuses everybody and who cares if true virgins can dance twice at elections?

Protect at all costs…your sense of humor…. Otherwise you might as well be dead!

Well, the way I heard it, ship's captains can perform wedding ceremonies but the marriage is valid only for the duration of the voyage.
