Don't know about the 90s boats, but if you want to go back a bit, the Acapulco 40 is a magnificent blue water boat. And they are still out there. When I bought mine the broker thought it was bulletproof.

Tayana 42 or sometimes called the Vancouver 42 was mentioned earlier and I highly second that..
It's a very capable boat and a lot of bang for the buck! Beautiful classic lines, canoe stern. Ours is aft cockpit but we sometimes are jealous of the center cockpit, they both have pros and cons. They are all very different in terms of set up because they are semi custom when built. The only thing I recommend is making sure you have some hp on your engine. Ours is 76hp and that's not typical. You see a lot in the 38 to 45hp but the extra power is much better if you are in a tight spot. She's really heavy..15 tons.
Ours is an 86 and we have owned for about 9 years. Paid 114k in 2009. We're not cruisers in the full time since we are still working but we have managed over 3500 nautical miles including crossing gulf of Mexico twice, we did the Bahamas and Abaco islands, and we participated in the 2017 revival of the Habana Race to Cuba from St. Petersburg Florida.

My wife and I cruised for 2 years on a Caliber 40 LRC, a boat that is purposefully designed for water sailing">blue water sailing. Great fuel and water capacity and a good performer. We sailed to Europe and back and through the entire eastern Caribbean without any issues.

I would be interested to know what you think about the Hunter 430 as a blue water boat?
I have just bought a 1996 version and only moved it from Montenegro to Croatia - just about 90nm, all on the engine as there was no wind.
My first impression is there is just too much stuff on board:
9kva generator
Two AC sets
Two heating units
Very large inverter
Huge refrigerator unit
Two macerators
Two grey tanks.
Seems like over kill to me and it results in very little storage space.

I think one of those questions was answered in the subject of the question. Is there any such thing as a “new” boat from the ‘90s? That would be a unicorn indeed.

Not necessarily an overkill. Assuming that you don't have too many people onboard, I would use one of the cabins as a huge and practical storage space. Better to store your clothes etc. there than in the bilge or lazarette or other small leftover spaces around the boat.

I would take my David Pedrick Cheoy Lee 41 Offshore every day of the week. 1988, she came with 3 options. 2 extra coats of varnish below, aluminium toe rail and 5/8" teak decks. Extended fin internal keel, full skeg, 5 hatches, 4 dorades, sailed like a dream, kept her 14 years and sold her for what I paid. Did not get value on the improvements. Down below, if it was not headliner or countertop, it was teak, inside lockers and all.
