G'day SWL,
my apologies if it's a bit "pedestrian" for the thread, but here's a recipe for meatloaf without the meat. Yummy!


Glaze
• 1/2 cup ketchup
• 2 tablespoons molasses
• 1 teaspoon chili powder
• 2 tablespoons mustard
• 1/4 cup water

Ingredients
• 1 cup oats
• 1 small onion, diced
• 1/2 large green pepper, diced
• 2 cloves garlic
• 1/2 cup sunflower kernels
• 1 can chickpeas, drained and rinsed
• 1 can pinto beans, drained and rinsed
• 2 tablespoons chili powder
• 2 tablespoons vegan Worcestershire sauce
Salt and pepper, to taste

1. Preheat oven to 375°.
2. In a small bowl, whisk together all glaze ingredients. Set aside.
3. In a food processor, pulse the oats until chopped well, but not into a powder.
4. Add onion, green pepper, garlic and sunflower kernels and pulse again until well combined.
5. Add in chickpeas, pinto beans, chili powder, Worcestershire, salt and pepper. Pulse until beans are almost nearly pureed. Leave a little bit of texture.
6. Spoon bean mixture into a greased loaf pan and even out.
7. Pour glaze over bean mixture.
Bake for 30-35 minutes or until glaze is caramelized and loaf is solid.

Oh, not pedestrian at all! Comfort food .
My hubby loves meatloaf and I have never tried making a veggie one, so this will be on the menu for the coming week. I have been experimenting with vegetarian (not vegan) meatballs lately and he has actually been really enjoying those.

Omnivorous means that it is not unnatural to eat this food surely? Before you respond, may I say that I am a meat eater, not a vegan/vegetarian. But I do not call other's choices of food as "unnatural". Well, maybe cannibalism, but that is not to some perhaps.

Today had yogurt for breakfast, steak sandwich for lunch, and tomato soup for dinner. Seems natural to me.

Howdy yawl,
Guess it is time for me to add my two pesos worth to this wonderful thread.
After being diagnosed with diabetes a few years ago I have searched for ways to cure this desease without medication. It has led me to being a (partially anyway) gluten-free, GMO-free, sugar-free, vegan, of raw foods.
Presently I live in a camper but plan to trade it for a live aboard sailing vessel. I am already accustomed to cramped living space with very little storage space and means for food items. I normally only buy what I will use in four to five days at most (that's about as long as the ice keeps)
Here are the exceptions as they have long shelf life and require no refrigeration: Nuts, dry beans, lentils, wild rice, grains and seeds. Coconut, grape seed,sesame seed and olive oils. Dried or pickled fruits and vegetables. Coconut,Almond and hemp milk (these will need to be refrigerated after opening and consumed in five to six days)
With that said this is a recipe thread.
Meatballs
A few Tbs coconut oil (if you use too much it is consumable and wearable)
1/4 cup washed and chopped leeks (white part)
1/2 cup chopped onions (use red for "color to the dish"
3 cloves of garlic chopped
2 cups chopped mushrooms (any variety that fits your budget)
1 cup cooked wild,long grain balsami rice (substitute quinoa, millet, couscous, bulgar or amaranth) cooked in organic vegetable stock.
1/2 cup cooked and mashed potatoes (use Yukon gold for a buttery flavor or substitute sweet potatoes or yams).
1/2 cup chopped nuts (pecan, walnut,any kind BUT peanut{which is not a nut})
1/4 tsp dried rosemary
1 Tbs fresh parsley
pinch of thyme
1 Tbs organic tomato pesto
1/2 tsp course kosher or sea salt (if you have a water maker you might be able use the salt from evaporation)
1/4 tsp fresh ground white or black pepper.

Saute leeks and onions in coconut oil (don't let the oil smoke) Add garlic and cook a couple of minutes, then add musrooms and cook until softened some. (I prefer all my veggies al dente)
Transfer cooked veggies to large mixing bowl ( Set the skillet aside without draining oil) and add cooked rice, potatoes,tomato,nuts, herbs and spices. Mix together with clean hands to a dough mix. Make into small balls pressing together very firmly. Saute Non-meat balls in set aside skillet adding more coconut oil. Cook until heated through.

Meatless meatballs can then be used as ordinary meaty meatballs but there gluten free and vegan. Any "excess" oil can be consumed with no guilt as it is a balanced oil and very healthy for you.

George, welcome as the first vegan contributor . I am so glad someone with a bit of experience has stepped into this thread. That was far more than a two pesos contribution LOL.

The 'meatballs' sound lovely with leeks and mushroom and some texture from the nuts. The potato should bind it well removing the need for eggs. All my meatless burger recipes really require eggs. I will try it as soon as I am near some shops again. I am really enjoying experimenting with the recipes.

Your camper lifestyle sounds like it will prep you perfectly for some of the aspects of cruising!

Cabbage a la tomato

Cabbage is readily available here at this time of year and keeps well on board, so I am always hunting up new recipes to try. Forget about any memories of humble cabbage as an overboiled side dish. Cabbage is MUCH more than this.

Most of my recipes are non vegan (egg noodles with cabbage is yummy, as is a crunchy salad with a lovely anchovy dressing, or cabbage sautéed than baked in stock and cheese melted in), but two favourites I made this week qualify.

The first is ludicrously easy using very basic, simple ingredients, yet surprisingly good. I made a pot yesterday ready to use after today's long sail.

We have just safely anchored and bubbly has been poured. Pizza dough has risen nicely. I am using the cabbage as a topping on one of the pizzas. Don't turn your nose up LOL. The combination of yeast dough with the usual herby tomato sauce base, and the cabbage with cheese melting through is an unusual, but very good mix.

Anyway, this is it:

SWL's CABBAGE in TOMATO

2 tbsp EV olive oil
1 onion
1 clove garlic
½ head medium cabbage
Approx 100g tomato paste (couple of heaped tablespoons)
Approx 1/2 cup water
1 stock cube
Freshly ground black pepper

- Sauté onion & garlic
- Add cabbage and toss until it has softened a little
- Stirring well, add tomato paste, stock cube and water
- stir occasionally until cabbage is has cooked, but still has a little bite
- Add pepper
- Seal in 2 glass jars while hot (flavour improves with standing)

Did I mention you can make a veggie burger with the meatball recipe by making patties instead.
Also eggs can be substueted by any of the commercial "egg replacer" (UGH SOY) products. As for me I replace one egg with 1/4 cup applesauce,or 1/2 to 1 medium smashed up ripe bannana or 1 Tbs ground flaxseed + 3 Tbs natural spring water.
Cabbage and a few other leafy greens can be fermented. Think sauerkraut. The fermentation process allows for longer shelf life and aids in digestive problems.
Seeds can be sprouted as some beans, lintels etc. for same reasons as fermentation. Sprouting is not as difficult as some would believe, taking anywhere from a few minutes to a few days depending on what you are sprouting.
Dehydration is another good alternative to refrigeration or canning.

All these recipes gives me concerns of how I should furnish my galley to prepare them. So far I think I have it narrowed down to a coffee mill, food processor, counter top convection oven/dehydrator, induction cooktop and maybe a bread maker.
