For those who are unfamiliar, here are the basics of what bottled-in-bond means: the whiskey must be at least four years old, bottled at 100 proof, aged in a federally bonded warehouse, and be the product of one distillery and one distilling season. When the Bottled in Bond Act was first passed in 1897, there was a good reason for it—whiskey was often adulterated with additives and other unsavory things that you probably wouldn’t want to actually consume by unscrupulous producers. So when a whiskey was marked as BIB, you could at least be assured that it wasn’t colored with shoe shine or flavored with leather straps. Nowadays, there are some who consider the BIB designation as more of a marketing gimmick than a useful indicator, given how strictly regulated alcohol is here in the US. But it still does have meaning, particularly for small distilleries who at long last have whiskey that’s more than four years old instead of rushing to bottle it at half that age. It’s also comparable to vintage, because what’s in the bottle must come from one distilling season.

Tennessee distillery Jack Daniel’s, one of the best-selling whiskey brands in the entire world, has its own bottled-in-bond whiskey (two, actually).

How to Make a Penicillin, the Most Successful New Whiskey Cocktail of the Millennium (So Far)

Some good medicine.

. . . a starting point for the Penicillin from New York bartender Sam Ross. As far as famous cocktails are concerned, I challenge you to find a less appealing name than “Penicillin,” and yet aside from perhaps the “Gold Rush” (from which this is derived) and the “Paper Plane” the Penicillin is the most successful cocktail invented in the current millennium. It flew under the radar for a few years, deployed locally in New York as a “bartender’s choice” cocktail for those in the know, quietly gaining devotees until it reached critical mass. It wasn’t ordered by James Bond or featured on Oprah; it stretched around the world simply because everyone loved it. Today you can walk into any cocktail bar in the world and confidently order one, whether in New York or New Orleans or Naples or Nassau. The Penicillin, much like the antibiotic for which it is named, is everywhere.

Penicillin
2 oz. Blended Scotch
0.75 oz. Lemon Juice
0.75 oz. Ginger / Honey Syrup
0.25 oz. Smoky Scotch

Add blended scotch, lemon juice and ginger/honey syrup to a cocktail shaker with ice, and shake for six to eight seconds. Strain over fresh ice into a rocks glass, gently drizzle the smoky scotch across the top, and garnish with something aromatically neutral like a ginger candy or else nothing at all.
