Nothing fancy here Steady, just a good Cabernet or Pinot Noir. Took me till 40 to figure out that any hard liquor and my night ends with yes officer!
As for a toast we usually go with "fair winds" or "salute".

On my boat there is usually only water to drink. If I am very lucky, there will be a jug of cold water in the icebox. Usually my drinking water is as warm as the day is hot, so a cold drink of water is a real treat. As for a toast, as a solo sailor I've never felt the need. I just chug my water, look into the sunset, and hope that my memories don't start leaking out of my eyes like they sometimes do.

Drink: Gray Goose and Tonic with a Lime and maybe a splash of Cranberry.

The best drink I've ever had was some sort of a rum concoction called a "Clint Eastwood sails to Jamaica and pistol whips the natives". They tasted awful, but I couldn't have been in any better company.

To rattlesnakes and rubbers....Two things I'm never gonna screw with!

A slight variation on what others have put up for a drink:

Dark & Stormy - Ginger beer (not Ginger ale) over ice in a tall glass; float 1-1/2 oz of dark rum; add squeeze/slice of lime. Finding good Ginger beer is the secret

...and from my late sister - speaking to me:

and if we should ever disagree,
here's to me!"

I'm partial to ginger ale, a splash of mango juice, and a generous splash of white rum. All normally available on my boat.

As for a toast, I'll steal one from Venezuela, "Salud Amor y Dinero ... bueno tengo dos de los tres" "Health, Love, and Money ... well, I have two of the three" Obviously, most sailors never get the money.

We say it slightly differently: "I wonder what the poor folk are doing back home". And yep, it's said quite often sitting in the cockpit with a libation.
