This specific description of a cadence of increasing frequency of clicks like a line stretching sounds very familiar to me. It's like an increasing tapping on a snare drum repeated at different locations around the boat.

There is a common fish called "Drum" and this is why they have this name. You have not identified your location, but you might ask the locals if they catch Drum in your area.

Don't listen to all this wrong advice ,,,its the strands in the fiberglass breaking as the boat gently flexes, most boats do it ,but eventually the break in half and the noise stops .do not sail in heavy weather without your PFD on

At First Sight...five years ago, while docked at New Smyrna Beach, FL, I heard the same crackling.....searched lockers, cabinets, the bilge...nothing. But when I flushed the toilet, the noise temporarily stopped...so, it's not an electrical short..It's ALIVE!

My post to this forum brought the same responses you have received...one stuck in my mind...Polyestermites eating my hull. Fortunately someone kindly explained they are tiny shrimp cleaning my hull.

The shrimp will produce a uniform random clicking and the fish (Drum) will be a series of calls and responses from varied locations.

Try placing a rod or pipe on different parts of the cabin while holding the other end to an ear. You will be able to locate it.
