I have baked 5 more breads changing the recipe every time and have come to the best version:
Final version recipe for 2 lb loaf:
- 1 can of Guinness
beer
- 1.5 Tbsp olive
oil
- 1.5 cups of white flour
- 1.5 cups of whole wheat flour
- 1 cup of rye flower
- 0.33 cup rolled oats
- 2 Tbsp sugar
- 2 tsp iodized
salt
- 1 tsp caraway seeds
- 1 tsp instant coffee
- 1 tsp cocoa
- 1.5 tsp instant yeast
When I reduced the white flour to 1 cup the bread didn't rise as good anymore so 1.5 cups of white flour is optimal. I also eliminated the corn flour because I don't taste it at all and heard it isn't too healthy. I changed
salt to iodized salt to avoid iodine deficiency (which I had with all the fancy salts today that have no iodine added!)
If you knead this by hand and it's too wet, just add some more white flour. For the bread makers you can let it be a very wet dough with the same end result.
