I am in the same situation: I HAVE a boat already and I love it. I just need to mod the V berth
The Jeanneau you have (according to your profile) looks like it already has as much of a centerline berth as can fit in there. What sort of modification are you contemplating? Are there tanks underneath that will need moving or replacing if you change things?

I want to make it more of a queen size bed so 2 adults can sleep (we live aboard).
Not sure if you are familiar with these boats, but they have long and wide “hand rails / shelves” that take a lot of space width wise. No idea why the architect would decided to loose 2’ when those 2’ would probably make the bed ok for 2 people.

The shelf/handrails are likely needed to help you get in & out of the bed. You could try to expand the existing mattress with foam inserts to go over the shelves and see how it goes.
