Countertop/drop-in stove mount options

Hi Everyone!

I recently purchased a Dickinson 2-burner drop-in propane stove to replace the aged Homestrand pressurized alcohol stove on our Pearson 10M. However, I measured incorrectly and the Dickinson is a little bit smaller than the existing cutout.

To resolve this, I was thinking that I'd get a larger-than-the-hole piece of material, cut a hole in the material for the stove, and screw that material down to the existing countertop. However, I can't figure out what material would be best for this.

I bought the stove second-hand from someone who had the same boat but lost it when it broke off its moorings in a storm and he said he used a material called Syn-Mar. He gave me a sample of it and it seems like it would be ideal, except I can't find anywhere to buy it! It seems that it's only available to contractors. The person I bought the stove from is a contractor so he's seeing if there he has any more laying around that I could buy from him but in case that's not possible, I'd like to figure out alternatives.

I was thinking maybe marine plywood with a layer of Formica (Pardon my ignorance here, I'm not super familiar with countertop materials anyways and couldn't tell if you can buy Formica as a slab or if it's just a layer you glue on to old countertops?) or some other decorative laminate over it, but not sure if the wood will be ok with the heat from the stove.

Does anyone have any ideas? Open to any and all suggestions. We don't liveaboard and it's an old boat so it doesn't have to be anything fancy, just want something practical that will support the stove well and look decent enough.

Here is a picture for reference. I'm looking for a piece that is 25"x25" to go from the cabinets up to the forward edge and then I'll cut notches for it to go around the fiddles.

Formica comes in a thin sheet and is glued to the plywood with contact cement. A better choice would a piece of Corian (or generic solid surface) countertop material. Or a "picture frame" made of teak or similar wood.

I used 1/2" thick Starboard material when I did the same thing on my old Cape Dory 28. It worked out great. And you can find it in different colors so you can pick one you like, Lol. Or just basic white. But it's easy to work with, cut with a jigsaw, sand and bevel edges, it's plenty strong.

I'd check out the waste bins at the local joinery/cabinet maker's workshops. (You'd only want very small piece which would be considered a worthless off cut to them)
