In France where I live you see iPhones everywhere... In Turkey, where my boat, is wintering too...
Yes you need a 3G (cellular) iPad for sailing because it is the one which has a GPS inside. A lot of iPad have crossed oceans now.
INavX with Navionics charts is a very common solution ... Not the only one but very convenient.

What about the little triangle that signifies the boat on a chart in the middle of the ocean like you get when using a PC based nav programme? Can the nav apps associated with IPAD provide this kind of "real time" screenshot on, for example, a trade wind crossing from Canaries to Antigua?

For screen shots on iPad on any app just press the power on/off and home buttons simultaneously. You'll hear the camera sound and it's done and on the film-roll.

To answer K_V_B question, yes I'm currently using the Imray app with charts for Australia (currently they only offer some areas of the world)

The advantage of this app is that the charts are raster scans of the Australian paper charts. And sortable by Australian chart number. I assume this is the same for other areas of the world.

I see two reasons for having paper charts. 1. In case your electronics fail. 2. The paper charts often have information that the electronic charts don't have. This doesn't help #1 but does help #2.

But buying all the large scale paper charts is out of my budget, but from Imray I get every Australian chart for about the cost of 4 paper charts.

I consider this one extra backup to my iNavX and C-Map app.

And yes, the little arrow of my position does appear on the charts.

What purpose is served by seeing a triangle on a chart in the middle of the ocean?

You would be probably 1000+ miles from hitting anything.

I agree with knowing where you are. When i am out, I look at it periodically just to see how far to go and where I had been.

I am also on a course and would like to know if I am following the trip or off. If off, I'd like to correct as soon as possible before a few days have gone by. Currents will push you off course faster than you can imagine at times, even if your compass is saying you are on course.

I'have seen somewhere a recommendation by active captain about a waterproof pouch for iPad and an attach to pedestal.

Cannot retrieve it...

Somebody has the info?
