You bring up something interesting, And that is to follow in suit to what everyone else is doing. Myself, I feel more comfortable with a bow and stern out as that way I know where I'll wake up in the morning. but I follow what others are doing in the anchorage.
Saw a boat here in the delta -(california)- that was out of NZ. the boat, a center cockpit, had a windless on the rear as well as the front.. Looked like a really nice set-up.

I've only used two anchors at the same time once. First anchor kept dragging in 100'. We were in a bay on a island off of Kenai Fjords National Park, Alaska. Pretty sure the second anchor saved the boat. Boat got heeled over much further at anchor than it ever did while sailing.

Took an hour to untangle the rodes after the blow was over. Hope to never repeat that experience.
