Fun topic.

For me, and forever, it will be cod / haddock ! - known as "tara" here in Japan.

When I arrive in Heaven, my first statement will be "Where are the Fish and Chips? And, oh yeah ... send over a few buckets of deep-fried baby scallops and plenty of cold beer while you're at it!"

No self respecting Aussie would eat a stonefish. Besides - and don't ask me how I know - those guys have spines like hypodermic needles that can jab through a thick leather glove like a hot knife goes through butter. Dangerous to handle!



Red Emperor is nice, but I have a preference for bbq'd Spanish Mackerel steaks.

Your Spaniard is probably the most practical yachty fish. You can catch them on the move, not particularly prone to ciguata, multiple feeds from the one fish, keeps well and retains it's texture, not excessively bloody to kill, no large scales to get everywhere.

Use kitchen scissors to cut off the spines of scorpion / lion fish, etc, and in fact any other fish with sharp spines or fins. They are then much easier to handle for cleaning, filetting, and even for cooking as a whole fish.

I find that I rarely use my kitchen shears for poultry and instead use them most often for preparing fish. Smaller fish can often be entirely cleaned and prepped with scissors and it can be an easier method.

They are also useful for lobster, crayfish, crab, and other crustaceans too.

Untill you have eaten fresh Stripey Trumpeter from Tasmanian waters, you don't know what good fish tastes like!!!!!!!!!!!!! Must be eaten fresh,it does not keep well. I Have eaten most fish, Spaniards, Coral Trout, Barramundi,Red Mullet etc. My normal favourite is Sand Flathead, but not near as good as Stripey.

Have actually, spent 9 months at the Maritime Collage in Launceston and been back for a few refreshers, ate it often and quite liked it too, just forgot about it...but it's not my favorite

Just returned from Portugal where there are a few uncommon species of fish and shellfish commonly on the menu.

...hands down..no equal here on the east coast of the USA...hogfish !!!
...you won't see it often and it's rarely on any menu....it is caught by rod and reel....but most people get it by spearfishing. People that catch it or spear it take it home and eat it with their families and rarely share with anyone else :-(

Another Cuban Hogfish fan. Better than mahi (dolphin), or cod.

Hog fish used to be the favorite one until I tried sablefish (black cod).
