It would be worth making sure you can afford the fuel to motor this boat for long distances. A steel motorsailer weighing 20+ tons will use a lot of fuel when under engine.

We are 20 tons and burn about 5 liters/hr @ 6 knots.

It is not so much how the rudder is balanced, but how the boat is balanced. When you sail her you can make adjustments to the rig so that in many cases the tiller is extremely light, almost neutral.
