Deck replacement in 20' Lund aluminum

New to this forum so hope someone can help with a non sailboat question.
I need deck replacement in my 2001, 20' Lund Fisherman Adventurer.
I hear that getting the old deck out after removing the console, built ins, etc takes the longest amount of time.
The deck is plywood with vinyl but I will probably want a rubberized coating over the plywood instead of replacing the vinyl.
The boat is on a mooring on the ocean here in Maine.
Should I use marine plywood or regular and have it epoxy coated?
How many man hours should it take for this project?
I plan to have it done locally and don't want to get ripped off.
I appreciate any and all comments.
