Electrical Question

I notice a lot of oxidation/electrolysis on connections and anywhere there's bare wire> My question is why do I not see more usage of dieletric grease on electrical contact points, fittings and bulb sockets> Is there some unknown reason to me that it's not used in marine environments.

No good reason. Not used due to lack of knowledge, laziness, too cheap to buy it, quicker not to use it, all the usual excuses why not to do it right the first time.
