You're looking for a "repeat cycle relay". The problem is twofold; finding one that runs at 12VDC, and finding one whose power usage is less than the fan it is turning on and off.

There's a really wide range of options out there,

cheap, never used it:

Expensive, very solid:

NTE R26-11AD10-12 Programmable DPDT 12 Volt AC or DC Repeat Cycle Time Delay Relay: Amazon.com: Industrial & Scientific

Or a programmable timer, don't know if I've ever used this one, but have used some that look identical:

Amico DC 12V Digital LCD Power Programmable Timer Time Switch Relay 16A Amps - Amazon.com

For the ones that are relays you'll probably also need the matching relay base, and those aren't usually included, have to be ordered separately.

You don't need a timer. Just wire it to the control head to run whenever the compressor is running. If you check the owners manual, there may already be a terminal for just that purpose.

Thanks,everyone, for your input. I just ran across our very own reefer guru, Richard Kollman, while reading another forum. Here's his take: Kollmann Marine

I read that the Radio Shack fans might last several years, and can be operated 7/24, which is a pretty simple compromise for me. I will probably pick up some of the suggested muffin fans as replacement spares, seeing as how important they are.

In a perfect world the fan would be tied to the temp in your refrig side by thermostat.... keeping the lettuce/veggies from freezing and spoiling...

One suggestion... a 24v fan running at 12v runs more slowly and run forever

We find that sometimes a little airflow is all that is needed
