Another system mentioned is clocking a piece of flotsam moving past the hull from a measured point forward to aft and calculating your speed.

Get rid of that folding prop, get a MP ( machine pitch ) for max thrust. I doubt you will actually see any reduced speed under sail due to prop drag. Michigan Prop has a form that will help you figure out size. A prop can be reduced in diameter and increased or decreased in pitch, with each inch worth approximately 200 +- rpm. Or you can buy a Max Prop (from PYI ) which is pitch adjustable for fine tuning. They also have a guide for setting the pitch and the folks at PyI are very helpful.
