Just a few things to consider
Boats are more expensive in NZ. If you buy one in NZ and then sell it in AUST you will have to pay 10% tax.
The boat you buy in NZ will need to be Category 1 standard...

Can anyone tell me why you have to discard the first few minutes of water produced by your water maker?

All I can think of is that it may not be working properly & contains high level of salt?...

I'll be doing what you suggest. I have 3 tanks and 2 I'll use for rain water the other will be purely from the water maker - just incase of contamination....

Its clear that we can cruise the pacific and find/catch enough water to live on.
One thing we don't want to have to do is hire cars to get water, grow monkey arms...

I have only been using solar only and the batteries are at 12.3v in the morning so now need to run engine or generator. I have generator but not used for 3 years. Only start occasionally...
