Education at Sea

Wondering if anyone has any wisdom to pass regarding the potential for my daughter to take college courses while cruising with her mother (my wife) and I for a year? She wants to pursue a degree in Marine Biology, so I am hoping that, given the chosen discipline and it's association with mariners, there are some who have gone down this path. Any pointers would be great: which schools offer remote programs, research grants, etc. Thanks!
