What is today’s wisdom (besides “keep them in the fridge, stupid!”)?
I've been told, dipping them in paraffin will extend the shelf live.

Re: What is the current wisdom on keeping eggs?

Both Eric Hiscock & Hal Roth, remember them?, advised getting fresh unwashed, un refrigerated eggs and coating with a thin layer of Vaseline and storing in a cool dark place.

I did this on my last boat that had no refrigeration, and was still eating them 4+ months later, in the tropics. Of course I always sniff tested them after a month or so.

Unwashed & unrefrigerated eggs are hard to come by in the US, both the norm in most other exotic/rural locals.

dehydrating, up to 10 years of storage life (if I recall well, loooong anyway). Use in that form on my canoe trips.

Here's another link.

We bought 3 flats of unwashed chicken eggs in Mexico, before leaving for French Polynesia. I turned the eggs once a week. We stopped eating them as fried eggs after a while, maybe 2-1/2 months, and the rest got used in baking or pancakes. The supply ran out at 3 months. None had to be discarded.

Turning them IS important, to keep the inner shell well moist. We haven't refrigerated eggs in about 36 yrs.! Occasionally, we have been gifted with fresh eggs from the people with the chickens. Mega yum! The freshness really makes a difference.

What I am about to write is sorta gross, so if you're squeamish, stop reading now....

One time, I got a very large egg, and it was covered with dried blood. I made some kind of comment to the fellow selling them, and he told me, "Yes, the hen died. She bled to death." I had known women die in childbirth--it is the stuff of fiction because it happens--but I didn't know it could happen with hens, too.

And they didn't bother (or didn't have water handy) to wash at least that egg? Wow...

Nah, not wow. The fluids that dry on the eggs being on the shell is what makes you able to keep them so long. If they washed away the blood, it would also wash away the other protection. No one refrigerates eggs who understands, or is able to buy safe eggs. The US is different, but even there, if you work at it, you can get natural eggs, not washed ones.

EGGS & CHICKENS: An old friend of mine, now gone UP or DOWN, told of a time he set out to sail across the Pacific. I suppose he was not thinking so well because He said that he stored ten dozen fresh Laid Farm Eggs in The Engine Room. About two-thirds way to Japan he was surprised when one morning he opened the Water-Tight Door to the Engine-Room there were several little Dodie's Peep-Peep-Peeping Around. I am supposing that a couple of months later he had Fried Chicken for dinner. The Old Senior Chief USN, RETIRED

Freezing them works well too. Gently mix the eggs and whites together and freeze. We usually freeze three or four in a container for scrambled eggs. Or smaller serves in ice cube trays. Can keep them in a cool spot for a few weeks then freeze them when the freezer is a bit emptier. We tried powdered egg but a poor second to frozen.

I buy them in ( unrefrigerated ) trays of thirty https://www.jumbo.cl/huevos-grandes-...deja-30-unid/p .... leave them like that and just stow them somewhere secure.
No problems up to 7 weeks..... never tried beyond that.

Thumbs up Re: What is the current wisdom on keeping eggs?

I've been keeping laying hens for many years ! I had a dozen about two months old ( in a cold fridge and some were washed to remove chicken ****) so I gave them the float test, and they all floated ! I did the one egg in the saucer at a time test ! They all looked , smelled, and tasted good. I done the same with 4 month old eggs and same results. No turning ,no vasolene, no getting sick, No smelly eggs ! I think refrigerating eggs might be the answer. Floating eggs are not Bad Eggs. I don't store or eat cracked eggs. I cook them and feed them to the cat & dog. They never got sick either ! Eggs are a super food !
