Which grease?

What is the best grease to use on the gears in my Lewmar Pro Series windlass?

I’d recommend using the same grease, as is in the windlass, now.
Gears that have been greased before, may have remnants of the old grease still in place. If an incompatible grease is introduced, there will be an interaction, that results in the soap and oil separating, and the oil leaking out. Bad things often result.

The most popular grease choices are lithium, lithium complex, and calcium sulfonate* grease.
Fortunately, lithium complex and calcium sulfonate greases generally have the advantage of being compatible with, both, each other, and many types of other common greases. However, calcium sulfonate greases are incompatible with bentonite clay grease, polyurea-based grease, and calcium complex grease.

* Calcium sulfonate greases tend to exhibit superior performance, in dropping point, shear stability, and oxidative resistance.
