I have been a mono hull sailor for years and now involved in building a cat, so exciting times and lots to learn!
The boat is ketch rigged with twin head sails, one from the bow of each hull. I am wondering if anyone has / or has sailed with this rig before, as I would love to hear about your experiences.

Sailing is sailing. One hull or two is just a technique adjustment. The only place I've seen boats rigged this way is for down wind, tradewinds sailing.
Twin headsails, one from the bow of each hull? On a ketch rig? The only boat I've heard of with that sort of headsail rig is John Hitch's cat, and that boat does not have a mainsail. How are you going to develop a slot effect?
