No idea sorry. Just turned on the oven on first time today, and only to see if it works. The stew is cooking in the slow cooker, and the temperature is 35C, so today is not the day to run the experiment, sorry. (I don't think this one is equipped with temperature control?)

I mentioned regulator bc we found that our US made gas regulator was not set high enough for the European GN Espace, thus resulting in less than optimum heating. The burners looked ok, but the cooking times seemed long. Upon investigation found that the regulator pressure needed adjustment.

The oven has a nameplate on the rear that states the operating pressure /orifice sizes and fuel type. Different set ups for different marketplaces in the world. May pay to check that the newly acquired oven is correct for your boat.

If the "Grill" was good then, turn the oven control knob to "Bake" position, gas mark #6 (high). Light oven bottom burner. The flame should be 12 -15mm in height and blue with some orange tinge in colour. If you are seeing only a blue in colour but only 5 - 7mm in height flame, then the probable cause is the oven temperature controller is faulty and needs replacement. These parts and gas certified service are expensive. I have been there, done that to get our ENO Perigord Gourmet Oven operational to "manufacturer standard" but would not do so again. Our experience with an operational temperature controller, is within 40 minutes you should see an oven temperature of 400F / 204C and it will maintain at that.

If you have the battery / inverter capability to run 1200 to 1800 watts for up to 3/4 hour then an option is to sell on the ENO and replace it with 3 in 1 microwave /convection /air fryer unit.

(Just seen "ahun" posting: Question to "ahun" -- How long does it take your new model ENO oven to reach 400F/ 204C?)
Very helpful. This is exactly what is happening. So when you say "temperature controller" is that the same thing as a thermocoupler?

The thermocouple on the ENO oven is located at the centre of the bottom burner U on the oven floor. This is the safety device that closes the internal gas safety valve if it does not sense the gas flame post lighting of the oven. This is NOT the oven temperature controller I refer to in my previous post.

On the temperature controlled ENO Perigord Gourmet Oven, the Gas control knob is connected to a gas temperature controller regulator (Thermostat). This regulator works with the set point provided by the user adjusting the knob and the temperature probe inside at the top back of the oven sensing the actual oven temperature. This probe has internal fluid that reacts to the applied oven temperature and regulates the valve inside the gas temperature control regulator, hence controls the gas feed to the burner, thus the size of the burner flame and resultant oven temperature. If this controller is faulty, then the symptoms already described in my previous post can be the resultant.

Some basic versions of marine gas ovens do not have this temperature control regulator, only a Gas Mark control. In these cases the end user has to regularly monitor the oven internal temperature by watching an owner supplied temperature gauge inside the oven and then manually adjusting the Gas Mark control to obtain the cooking temperature required.

If the ENO oven is shop brand new to you, then it should be a warranty repair. If it is only a "new to you" then you shall need a certified gas repairer to undertake the repair.

Perhaps not relevant to a marine unit, but OldGreyB mentioned a possible safety solenoid, intended to stop gas flow if the flame is not lit. On my home gas oven this safety solenoid was failing and caused symptoms similar to those described by the original poster: slow heating and limited max temperature. Internet searches confirmed this was a common enough problem and replacing the safety unit restored proper function. It was a simple swap, after disassembling a good portion of the stove.
