Family boat - Single Berths & desks vs Doubles and private heads

I'm looking at boats that either have, or are readily modified to cabins / spaces with single berths & desk for work / study, whilst giving up double beds and private heads for each cabin.

I'm open to any suggestions for brands / layouts.
Used, up to $250K type numbers.

I do notice the lifting keel boats seem to be forced to a better family layout with bunks on each side of the keel case.

Outbound yachts feature very nice work rooms in the aft lazarette area.

Hanse has a few models that can be customized to have a work bench/office instead of a stateroom.
