replacing transducer using old cable

Is it possible to replace an airmar multi function transducer without replacing the cable/wire? It doesn't look like there's a connector at the transducer end, but it's insane to me that you would have to rerun a perfectly good data cable. Does the top of the transducer open up and allow you to rewire the new one to the old cable?

Not commonly, the wires are glued/sealed into the transducer for obvious reasons.
Running a new cable is often not as difficult as it sounds as you can use the old cable as a messenger line. That being said, if your new transducer is a similar type/brand/model and uses the same number and type of cable, then of course you could splice it to the new transducer. It's just not a recommended way of doing it.

You can get a transducer with a short pig-tail and then your instrument specific plug on the other end, or you can get a transducer with the long cable already attached.

If you have a "plug type" basic transducer that you insert into a thruhull, then you don't even need to pull the boat out of the water. However, if it is an integrated thruhull transducer, then the boat has to come out as well.
