Our pressure cooker runs easily off the inverter for the few minutes it takes to get up to pressure. Once there, you're essentially done.

The new breed of electric pressure cookers (e.g.; InstantPot) can also be used in a slow-cook mode. You can find the praises of these things sung all over the internet, so I won't repeat them here....
