Careful here, I know it's still early days, but you need to run your generator under load (not just water heater) and long enough to really get the coolant/oil/windings hot. This will prevent damage...

Sometimes yes. But you'll need the hygrometer to accurately determine when the equalization is complete.

Let's assume your shunt is accurate for the moment, chances are it was supplied with the display so the default will work.

Otherwise the shunt itself should have the type written on it.

turn 110 and 220 selectors to off

start generator

Imho, depending on what your pulldown today reveals, and with your additional battery charger, I think the solar will allow you to maintain full charge with your cook time runs of the generator.
