There are some basic food groups which your body cannot live without. One of them is guacamole. Here's a great recipe:

Couple of ripe avocados mashed
1/2 medium sized onion finely chopped
1 clove garlic crushed
salt
pepper
diced pickled jalapeno peppers (how much? - how spicy do you like your guacamole? You have to sort of taste your way there - jalapenos differ in strength also)

Mix all the above well, then add a firm tomato cut into small pieces. stir, but be careful not ruin the tomatoes texture.

Serve with tortilla chips - the salted kind, not the ones with artificial flavor (they ruin the good taste of the guacamole).

Beer tastes good with this - margaritas taste better.

Margaritas (the 1-2-3 step recipe)
1 glass with salt around the edge
lots of ice cubes (NOT crushed)
in a blender pour:
1 shot triple sec liquor
2 shots tequila
3 shots lime juice

blend well, pour over ice, put a wedge of lime in for good looks.

ONly problem with the above is you really can only make them in pitchers. Which means you drink more of them, then need to make more. The guacamole makes you thirsty and you will make even more

But by then who cares?

Roast pork, with crackling (or chicken if no pork with the rind available)
Roast potatoes
Spring greens
Apple sauce
Stuffing balls
Gravy

Simple, easy and delicous. Just choose your ingredients wisely.

With luck they'll be enough chicken left over to make a paella. Left over bones into stock for the soup you'll make with the left over veg.

Cold roast pork for your lunch sandwich.

Not actually at anchor... but sailing between anchorages I prepared this lunch:

Pasta w/ clams, scallops, shrimp... olive oil, garlic, parsley, oregano

After a long sail, a simple dinner is best. Our favorite is beans and franks with fresh home made tortilla's. I keep a roll of flour tortilla dough in the ref and when we want a fresh tortilla just pluck off some dough and roll out and cook. Simple, quick, hot and filling.

We really like to stick with one pot meals at sea. A good gumbo with fish of the day is always good, and can just slowly cook for a long time if ya need to have do so! We love beans, so red beans and rice are high up on our list! also white beans with an old ham hock are not to shabby either! We use an old single burner swivel stove, when the weathers bad, works great for stews and gumbos and such. when it really gets bad we resort to the old stand by sangwitchs! LOL and coffee (can't live without GOOD COFFEE) we pretty much eat the same as we would ashore !

You're on the right track....my only addition would be to add a baked potato plus sour cream and butter :-)

Potatoes and Stuff

Hardware:
Cast iron skillet w/lid

Ingredients:
Golden Grill dehydrated hashbrown potatoes (Costco or https://smile.amazon.com/Idaho-Spuds...s%2C214&sr=8-3 )
½ onion
Garlic
Red or yellow pepper, froz spinach (cooked)
Meat (sliced chicken sausage, diced ham, bacon, hamburger, whatever)
Cheese (cheddar, pepperjack, whatever)
4 eggs

Prepare potatoes per instructions
Saute veggies and meat
Pour potatoes on top of veggie & meat
Cover and cook / occasionally mix from bottom to crisp
When potatoes are browned to your liking, cover with shredded cheese and cover
Reduce heat till cheese melts
Use a large spoon to dimple mixture, crack an egg into each
Cover and cook till eggs are cooked to your liking
Enjoy with an unpretentious box o’ wine

in a pan mix grilled and peeled poblano chiles x 3 diced , add diced onion and minced garlic and cilantro and coconut milk and mangos. cook it to a smooth sauce
add fresh tuna or some pig or chikkin and cook the meat in the sauce. serve over rice.
is awesome.
the best thing to cook after a long passage is opc, other peoples cooking.. i love taco stands and places with fast fresh food...tacos of shrimp fish and meats are always open and always cheap and fresh. same with caldos(stews) faster than fast food, and good for ye. i go there if i feel like eating after passage.

Easiest, impressive thing? A huge pot of mussels in white wine. Sautee loads of garlic in olive oil in big pot, throw in some cherry tomatoes cut in half, mussels and half bottle of white wine or prosecco (red wine works great too). Lid on, done in 5 minutes, then a handful of parsley and lots of lemons squeezed over, served with rustic bread.... guests seem to just love the hell out of rustic bread!
