Boat: '79 Pearson- 365 ketch,# 264 hull

Ketch rigging
We own a 79' Pearson 365 Ketch rig. What kind of sailing can you do with it? We use the normal sail types. Jib , Main, mizzen. I want to know how to use the staysails and foresails but cant find any diagrams on that running rigging. Any input?
