Where to get hold of a Beneteau 57, stability curve GM ?

Good luck! Its not something that is easy to find. I think this info should be easily available for all boats but is almost impossible to get.

This spread sheet will give some help but does not include and actual GZ curve. Iso AVS is 116 deg and STIX is 53. Larger boats can get away with lower AVS as it is deemed that larger sizes are less likely to be knocked down or inverted. Smaller boats need a higher AVS in order to achieve an ISO A rating. However I just saw that a Catalina 42 has an AVS of 105! I have never been able to find anything on my boat.

Call Beneteau, they are probably the best source. On many boats US Sailing has them, but you have to pay for them.
