Hoisting solutions for my Newf

Hello all,
I am hoping that someone may have some good advice for me to create a solution that will allow me to sail more often with my dog.

Millie is a 125lb Newf that loves being on the boat. She is great when underway, and happy to lie still and quiet in the cockpit. The problem is that i would like to be able to take her with us on longer trips, but need to be able to get her into the dinghy or water and then back on the boat.

My boat is an older 36' sailboat with a canoe stern, which does not lend itself well to either getting her off the boat or back on the boat.

I have been thinking of adding a block to the end of the boom that i could use to hoist her either up or down over the side. I am hoping that someone else may have already attempted a solution like this and can provide me with some tips or guidance on making this work properly.

I have a solid vang, but also have the topping lift rigged back to the cockpit.
