I did that when I bought my boat. The Purchase and Sale agreement had a standard Escrow attachment, just like you’d have on a house. My seller was very generous about this as he was very confident...

Where will you keep the boat? I live in MA, bought a boat that was in CT, and keep it in RI (USCG homeport is Newport). I ended up, legally, with no taxes to pay anywhere, including not paying...
