I think this pretty much sums it up, and if you look at an OLD Hatteras or other high quality boat with a lot of SS, that stuff seems to never stain.

That is a persistent myth, that “good” stainless is non magnetic, or that 316 isn’t magnetic or that 304 is.
304 and 316 are both series 300 SS and as such have very similar properties to each...

Probably 90% or better of the marine hardware, especially nuts and bolts that you buy are in fact 18-8, which is 304. 316 common hardware in a place like West Marine is rare.
