I use strong bungee cords. It means that there is inch or so of play if something hits the rudder.

Agreed!! This works brilliantly. You may get the odd barracuda but I’ve caught tuna, King and Spanish mackerel and a beautiful Dolphin fish with almost exactly this rig and a bungee chord.
