Winter Sailing / Mile Building

I would like to build some experience before starting a Yachtmaster Offshore fastrak course. I have a Coastal skipper ticket and quite a bit of (mainly) fair weather sailing experience. Ideally I'd like a week of hard sailing in Nov/ Dec or Mar/Apr including a couple (or more 60 plus mile passages, nightsailing etc). I don't mind travelling around Europe so Portugal etc is fine but I would like advice on which school will be put us to work so I can build confidence and experience espacially in tidal waters and - ideally - rougher seas.
