Sailing San Diego to Brisbane, Oz - Advice Needed on Everything

Hi, am getting ready to sail a Columbia 50 from San Diego to Brisbane, Oz via Fiji. My first puddle jump and needing advice on just about everything; e.g. best way to ensure enough power to run fridge-auto pilot- nav lights, how much fresh water for 2 souls, special foods that keep long and fix up easy, must read books for the passage, tool kit, spare parts for the Westerbeke etc., etc. Just finished gunkholing to Costa Rica on a Hallbers-Rassy but nearly always had land in sight. This time figuring around 5 weeks to first landfall in Fiji. Big difference. Look forward to any and all thoughts you can share to help out.
