Small sailboat for 2 adults fit on van roof?

We have a 34 foot Pacific Seacraft sailboat and a 17 foot Montgomery sailboat but would like a much lighter smaller boat that we could hand launch in some of the smaller lakes. We want to be able to carry the boat on the top of our Ford Transit van which has a 120" Alurack roof rack and about 400 pound capacity. I think we could manage to lift 100 pounds without much of a problem....maybe as much as 120 pounds. The rack is 5'6" wide and the boat could be 11 to 12 feet long with no problem.

We are two adults and I am 6'6" 230 pounds so it can't be a super tiny seven foot sailing dinghy.

We have enough of a project refitting our PSC34 so I either want to buy something new, or in good enough shape that it doesn't need any work.

I have been digging around but feel there might be some I am missing.

Budget is about $5,000 or less.
