I have a windlass remote up near the bow - how can I wire up one for the stern.?

Remote stern switches are generally wired in parallel with the bow switches.
You're proposal is only practicable with a solenoid/contactor controlled motor.

As Gord said, it will only work if you have a solenoid control box, but if you have a remote (handheld unit, right?) then you have a solenoid box. The wiring is easy. First buy a spdt rocker switch from Lewmar or similar. Then mount it where it will be easy to use at the helm. Then run three conductors of 16-18 gauge wire from the solenoid box to the new switch. The current to the solenoids is a few amps so that gauge will work fine. One conductor is common and the others are up or down. Wire them in parallel to the existing remote.

It's so easy that I have one forward at the windlass, one inside the anchor locker for flaking the chain while pulling it in, one in the after bilge chain locker so I can pull the chain and stow it to trim the boat better, and one at the helm, to allow me to launch and retrieve the anchor from the center cockpit. Several of these spots also have the special plug that goes with the Quick chain counter so I can monitor how much chain is out. I don't use foot switches because I have a tendency to step on them when the deck is rolling, so mine are mounted in a special box on the pulpit rail to keep them easily at hand while I am holding on.
