Shouldn't happen (not to say it doesn't) Stove should have a thermocouple and gas should be turned off at an inline and or bottle.

You could always turn the gas off at the bottle when finished using it and have the bottles installed in a location that means they vent to air. My last 3 or 4 boats were like this and had gas...
