For portables, the Cruseairs are hard to beat, I didn't know about the used option.
I have seen many window units in the companionway, course then you get to climb over them each time.
5,000 BTU...

A fridge usually pulls about 5 amps max at 12 VDC or so, that about 60 watts
An efficient 16K AC pulls about 11 amps at 120 VAC, or about 1320 watts, Using a fridge as an Airconditioner will work...
