Epoxy or polyester?

I have some self-tapping screws screwed straight into the gunwale, which have stripped. So now I plan to drill out the holes oversize, fill them with resin, then drill & tap them, and use machine screws for better strength.

So should I use polyester or epoxy resin? I know epoxy is stronger than polyester, but is it a big difference? Would something like Araldite do the job?

for that type of repair epoxy would be the best have some universal thinners for cleanup

Araldite is an epoxy resin

Araldite Epoxy would be fine. Check the product labelling as some of their adhesives are not.
