Will I Lose My Old Data ?

Would like to install the new v2.5 but don't want to risk loosing my old data.

Will it be incorporated in the new install or is there a file I can backup and re insert in the new install?

You didn't tell us from which version are you upgrading nor on which operating system, so you will get just a general answer.
You should not loose your data on upgrade and there are files you could and should backup.
Read the manual Installing OpenCPN | Official OpenCPN Homepage - Scroll to "Location of Important Files. Log and config files." and backup the whole folder where the logfile is before upgrade.
If you are upgrading from a very old version, where the manual will look like telling you something that's not true, get back and tell us at least the version and OS.

I'm on Version 2.1.0 Build 624a, running on Windows 7.

In this case the upgrade should be without problems.
To be sure, backup the folder
Code:
C:\Users\{your username}\AppData\Roaming\opencpn
(especially navobj.xml file - it contains all your routes, tracks and waypoints) prior to upgrade and then follow the instructions of the 2.5.0 installer. It will probably tell you that it found an "incompatible" older version, you may answer yes to the uninstallation question.
