Lightbulb New Lazarette Hatch, Glass it?

During this years spring refit, I decided to re design Idoras lazarette hatch. The old one was quite heavy and bulky and presented a tripping hazard. Naturally the hatch is wood as is the boat. In the interest of longevity and durability I want to glass it, inside and out. Should I do a simple cold layup, or are vacuum bag techniques applicable to objects shaped like hatches?
All resin heads please chime in.
