Ignoring foils, which are out there on their own, you can have planing cats - usually trailerable power cats, and displacement cats, which are still capable of going well beyond (multiples of)...

Maybe you pay more attention to cat's? Maybe your boat is fast enough to keep them in sight a bit longer. ;):D

And you're correct - much of what is said about cat's by monohull sailors is based...

Incorrect. Edmond Bruce discovered that above a LWL:BWL ratio of around 8:1, theoretical hull speeds cease to apply. Bow wave propagation is reduced to the point it is no longer a limiting factor.

I think most of us would agree that the slowest cat's will be slower than a 50 odd foot Jeanneau.
