I think it's more to do with the complexity of their steering system than being lazy. Due to Outremer's direct connection for the tillers, and the bulkhead wheel steering, moving the rudders aft...

The main one I know of is the Up-Side-Up system, but I'm sure there are others. A TS cat flipped last year with that system installed .... so it's not full proof.
