In any case, space permitting it, makes sense to keep your ex onboard. Even a brand new sail can be rendered useless by a bad squall or an absent minded driver.

I believe to some, the quality of the sail (coming mostly from quality of materials and quality of workmanship) counts.

A good sail will outlast a bad one by a couple of years perhaps. If you...

To me: Oyster or Setter, get the boat ex sails then get good sails from a trusted loft.

That is if any serious sailing is planned.

I would not make assumption about Oyster. My own experience with three different models is quite different ...

Just walk into a loft and ask a quote. You can get rough quotes online too.

In some places USD/EUR 80 per m2 is a fair bet. Plain kites come cheaper per m2.
